Culinary Rock Star Goes Solo
(Cannon Beach,
Oregon) – John Newman, former Executive Chef of the Stephanie
Inn Dining Room, has cut out on his own and opened a monster of
a culinary delight on the Oregon coast with Newman’s At 988.
Where
the old Pulicci’s Italian restaurant stood in Cannon Beach’s
“mid town,” Newman’s At 988 has breathed new life
into the building and shot out a spectacular culinary beam into
Oregon’s gourmet restaurant firmament. Newman’s touts
itself as French/Italian cuisine, but like Newman’s career
and the dishes themselves, there are many more layers to explore
than initially meet the eye.
Newman is already
a celebrity in Oregon’s culinary world - a bit of a rock star,
in the eyes of some - one whose reputation will undoubtedly mean
the restaurant is headed for great things. He was trained in culinary
school in New York, worked in various places in Europe and other
major cities around the U.S., and then set the Stephanie Inn on
fire about eight years ago.
He left there
earlier this year, and slowly acquired this building. Newman and
his wife Sandy opened the restaurant in mid-February amidst speculation
dinners would cost somewhere around $100 for two, but in fact the
prices are about half that.
Newman calls
the fare “New York-style Italian and French,” with the
atmosphere provided by a lush table layout, candles, a beautiful,
muted paint job on the interior walls and music often by Tony Bennett
or Frank Sinatra wafting through the background.

There are pastas
or fish selections which change daily, a lamb rack with mire poix
rague, a steak that comes either tenderloin or New York-style with
tomato, spinach, polenta and pancetta, among other selections –
all around $24.
The menu of
appetizers is truly amazing, with Newman’s signature crab
cakes topping the list. Another stunner is the pasta with fois gras
with truffles, which is a condensed duck liver sizzled and browned
to absolute perfection, tasting more like the most perfectly done
steak you’ve ever had.
Desserts are
also notable and full of delicate, artfully created surprises.

On July 22,
Newman participates in the "Palate to Palette" event at
Cannon Beach's DragonFire Gallery. Palate to Palette happens in
three parts: three famous local chefs from the North Oregon Coast,
three courses of food, three different wines paired with those courses,
three sets of live music, and three unveilings of artworks. The
other chefs are John Sowa from Seaside's Lil' Bayou and Robert Neroni
of Cannon Beach EVOO Cooking School. That event is free, but to
